Low Carb Molten Chocolate Cake

Type 1
Serves 4
Ingredients
40g good quality dark chocolate
40g butter
1/2 tsp vanilla extract (optional)
2 eggs
Method
Preheat oven to 200c and grease 4 small ramekins
Divide or chop chocolate into small pieces, put in a pan with the butter and melt carefully on a medium heat
Stir into a smooth batter and add the vanilla, set aside and let cool but not get firm
Crack the eggs into a bowl and whisk until fluffy
Pour the chocolate batter into the egg mixture and mix well until the batter is smooth
Pour the mixture into the ramekins and place in the oven, immediately lowering the heat to 170c
Check in 5-7 minutes
Remove from oven and serve lukewarm, perhaps with a dollop of cream

(Carb value will differ on what kind of chocolate you use and if you prefer to add some sweetener to it)

Sounds fab @Kaylz - Delia used to do something called 'squidgy chocolate log' which was mostly whipped up eggs and double cream with a bit of dark chocolate mixed in. Yum!
 
Ooh might try that. I can't abide artificial sweetener so most recipes on here don't catch my eye, but that sounds bitter and creamy, just my bag 🙂

I can't stand sweetener either when the DSN suggested that instead of sugar in my coffee I was like NO I'll just not take anything in it thanks, like it was some kind of poison haha, my only problem is if I make it when my OH is about I have to add a wee bit of sugar in his as he's not a big fan of dark chocolate x

Actually, this looks very similar to a chocolate brownie recipe I tried. That was very nice.

You don't have to but I did always been a gentle baker haha hope you enjoy it as much as I did 🙂 x
 
Oh I suggest if you like peanut butter add some in 🙂 x
