Low carb Kung Po Chicken

I'll be having this for dinner tonight... the recipe is supposed to be for 4, but I like a LOT of sauce and this is virtually syn-free.

1 ring fresh pineapple, chopped
5 tbsp stock (veg or chicken)
2 tbsp soy sauce
1 tbsp white wine vinegar or cider vinegar
4 tbsp fresh orange juice (eat the pulp)
1 tsp sweetener (or to taste)
1 tbsp tomato puree
2 tbsp red pepper, finely diced
2 tbsp onion, finely chopped
1-2 cloves garlic, grated or finely chopped
1 tsp dried chilli flakes (or to taste)
2 tsp cornflour
Salt and pepper to taste

Simmer everything for 5 minutes, then mix the cornflour with 2 tsp water and stir in until thickened. Adjust the seasoning and it's done. Add Zero Noodles* and simmer for 5 minutes if using them.

Stir fry some chicken (I use thigh meat) with beansprouts and whatever else is lurking in the fridge. Add the sauce and simmer for 1 minute.

* I've recently discovered that Holland & Barrett sell Zero Noodles (carb-free and virtually calorie free).
 
That sounds delic as I have stopped eating Chinese takeaway due to all the additives which really messes up my blood sugars. How much chicken do you use ?

For just me, I have the meat from one large thigh or a smallish breast portion, i.e. about 100g after all the skin/bone/fat is cut off. With a bit more meat and veg, this will easily stretch to two portions - but I do like to pig out now and again. At least with this recipe I don't have to feel guilty about it. :D
