low carb gammon bake

This is a nice low carb meal.

1 round of uncooked gammon (not the preformed stuff!)
onion
peppers
tomatoes
sweetcorn
chilli
garlic
cheese


Place the gammon on a baking tray and then chop all the ingredients into small pieces so they cook evenly. You can 'sweat' the onions if you like them caremalised.
Sprinkle with herbs (fresh is better as it doesnt burn) - basil is nice!

Place in hot oven for 20 minutes until melted and golden on the top.

Make sure you buy good quality gammon as the cheaper ones are salty!
