I was so pleased with the way this turned out I thought I'd share. I based it loosely on a Delia recipe for vegetarian rich onion tart which was in one of her very early books. I've calculated that half of the tart/quiche (which is a generous serving) contains about 400 calories and just 19g of carbs.

4 cooking onions
1tsp olive oil
1 tsp butter
6 medium sized eggs
1 tub of natural cottage cheese (c200g)
Salt, pepper, paprika, mixed herbs
1 tblsp grated parmesan or peccorino cheese

Put the olive oil and butter in a frying pan and caramelise the onions, moving them around the pan regularly to prevent burning. It takes time for them to turn dark brown, but the flavour is worth the wait.
Mix together all other ingredients except the grated cheese.
When the onions are ready spread them across the bottom of a 7" tin or dish (I used a cake liner, but that's not essential).
Pour the egg mixture over the onions and sprinkle the grated cheese on top.
Bake for 45 minutes at 180C.
Leave to cool and serve with salad and a squeeze of lemon juice.

It was really delicious...honest!
