LOW CARB CHOCOLATE MINI CAKE

MINI CHOCOLATE CAKE (3 Minutes microwave)

Per Serving
319 kcal
3g Carbohydrate
15g Fibre
32g Fat
9g Saturated fat
170mg Sodium

Ingredients
4 Tablespoons ground almonds
1 Tablespoon cocoa
1/4 Teaspoon baking powder
2 Tablespoons granulated *sweetener (Stevia; Truvia; Xylitol or Erythritol)
2 Tablespoons butter - melted
1 Tablespoon water
1 Egg

Method
1. Mix the ground almonds, cocoa, baking powder& sweetener in a glass bowl
2. Stir in the melted butter, water & egg. Mix well with a spoon or fork
3. Scrape batter down evenly with a rubber spatula. Cover with cling film & vent by cutting a
small slit in the centre
4. Microwave on HIGH for 1 minute 20 seconds until set but still a little moist on top
Cool slightly and serve warm topped with whipped cream - ice cream - squires cream

I’ve managed to lower my weight, lower my insulin & maintaining blood sugars by cutting out the Sweeteners about 6 months ago. Reading about a news item posted by doctors at my health centre on their facebook page. Artificial Sweeteners confuse the brain & make you eat more. I posted a thread about it under the newbie section.

Personally I wouldn't substitute sweeteners for sugar in this recipe. I mean, how often are you going to eat the chocolate cake? If you were to eat it for breakfast, lunch and evening meal ~ and snacked on one or two in between meals then, you'd be consuming a hell of a lot of sugar just in one day😱 For the odd occasion that you'll eat this choc cake, I think the amount of sweetener that would have an adverse effect on your bg, is neglible. But it's a matter for you to decide whether or not you want to use sugar in this recipe as opposed to using sweeteners🙂

Made sweet potato and chilli soup from new cook book. It was delicious, but don’t know how they worked out portion size. Said it would do 4 but I doubled it up and got 5 portions. Maybe I am a greedy guts. Plus side as well, it only took about 25 mins to make and BG after 2 hours up by 2,

I made your yummy choccy cake and it was WONDERFUL 🙂, only trouble was my husband wanted some of it too, so I had to share :(. I'm going to double the ingredients next time and bulk his up with ice-cream, then I can have one all to myself. Not sure if I can eat ice-cream?????

There was a question I would like to ask: I have now been told that I am in the pre-diabetic range (46) but the doctor still wants me to keep taking Metformin 500 mg morning only daily. Why is that do you think?
I have only been diagnosed since January, and have managed to diet down to 8 3/4 stone and now pre-D. Started at 10stone. Bit too thin now, I think, but finding it hard to put any weight back on eating only veg, some low carbs food and meat, eggs, cheese etc.
Would value any advice. Should I insist on stopping them or go with the flow?
