Hi

I am looking for Low Carb simple low cost / budget friendly recipes anything that can be made in a slow cooker or batch cooked or ingredients made up in bags and frozen for a quick dinner which can be easily taken out and reheated or cooked in no time, any suggestions please? Also any snack or seasonal treats would be great too. Thanks.

I’d also suggest looking at Kate and Giancarlo Caldesi’s stuff as it’s easy to cook and can be quite easy on the bank balance.

Kale chips are a very easy and deliciously moreish snack.
Lots of recipes online for them but basically wash and dry the kale, oil and seasoning in a bowl, toss the kale so it’s coated in the seasoned oil, spread out on a tray and bake.
They firm up once they’re out of the oven. And they keep for a little while in an airtight container.

I am a fan of Nature Valley, KIND or shop own nut and chocolate PROTEIN bars, all less than 10g carb per bar.
Nuts are good, Kvarg or high protein deserts which are low carb are good with berries, sugarfree jelly with some added berries and cream for a desert or strawberries and cream.
 
I have been using a pressure cooker recently, that is very good for batch cooking, but individual meals are so much faster - particularly if cooking fresh or defrosted.

Same. I bought a small Instant Pot and it’s great as both a slow cooker and a pressure cooker. It’s great at cooking things straight from frozen as well.
 
I make soups, stews, chillis and curries in my slow cooker. My favourite soup being broccoli and Stilton (I don't put the potato in the recipe, and usually add 50g of split red lentils for a bit of extra protein). BBC food have various soup recipes.
Also aubergine parmigiana, though I don't add the breadcrumbs, or sugar
This is my recipe (I'm on a 500 calorie a meal diet, so my portion sizes and ingredients are a bit stingy)

Aubergine and mushroom parmitagiana, three small portions, 389 calories, 12.5g carbs each
Passata/chopped tomatoes 300g
Aubergine 200g
Mozzarella 150g
Sliced mushrooms 200g
Tomatoes, sliced 100g
Cheddar 50g, grated
pinch each of salt, pepper, chilli, oregano and a few leaves of basil to garnish
Garlic clove, chopped
stock cube
sunflower oil - teaspoon

Method
Put the passata or chopped tomatoes in a jug with a garlic clove, spices, cheddar and the stock cube. Blend together with a stick blender.
Cut the aubergines into slices about 1cm thick and lightly fry in oil until slightly golden. Do the same with the sliced mushrooms.
Place a layer of aubergine and mushroom slices, and a slice of tomato in the slow cooker, then put mozzarella slices over. Cover with sauce. Repeat, creating layers until you've run out of ingredients.
Cook in the slow cooker until it's done - 4 to 6 hours.
Serve with salad, or garlic mushrooms (not included in calorie/carb count).
 
I think I'm doing a mixed vegetables thing in a tomato based sauce.

Carrot celery and onion diced finely cooked off in a little oil. Some garlic and a couple of chillies.

1 can of chopped tomato
cook on med for 5 mins.
Add any spices

A couple of big chunky bits of veg. Broccoli, peppers courgette.

Add stock cube and water
Cook for about 20 mins throw in some kale or spinach and cook for 5 more.

Would normally serve this with crusty bread or rice but I'll have it with something else

Maybe some baked Quorn fillets or something like that for me.

Usually get 3/4 portion out of it but recently have managed to get 5 because mine have been a little smaller.
 
I just saw this book in the flesh which looked good. Low-Carb Diet for beginners. Mendocino press but from Amazon £5.99.
Note that it is American so FIBER would need to be deducted from the carb amount given to get the carbs for the recipe.
 
Slow cooker today, big chunks of veg in tomato.

1 medium courgette
7-8 florets of broccoli
2 celery stalks
150g mushrooms
1 can kidney beans drained and rinsed
1 can butter beans drained and rinsed
1 can chopped tomato

Spices:
Salt pepper cumin fennel seeds. Herbs and fresh herbs at the very end.
1cm of ginger
1 garlic clove
1 chilli

Between 300-500 ml water. And then a bit more after a couple of hours.

4-6 hours in a slow cooker.

Makes: 5 portions the way we split it. I've had to guess the price but around £1.20 - £1.60 per portion including couscous and fresh herbs.

Not sure I believe it or not but my fitness pal suggests 165cal, 23g carb per portion based on me entering the ingredients.

Served with some couscous.
 
I cut out all my refined sugar and carbs. I use almond, coconut, linseed and psyllium husks to make my keto rotis. I was 52.9 kg and now I'm 44.6 kg. My blood test results changed from 6.4 to 5.9 now. Very pleased with it. I enjoy watching new ideas for cooking.
 
Can I highlight that the OP asked about budget options.
Sadly, someone on a budget may struggle to fork out for a slow cooker.
And things like almond and coconut flour are not cheap.
