Low carb Baileys recipe

I’m ashamed to say I’ve just had to throw away 2 ltr bottles of Baileys which languished unnoticed in the back of the cupboard (presents) and weren’t drunk after my diabetes diagnosis. Unfortunately, they do have a shelf life and I didn’t want to risk a dodgy tummy! 😳

A Shame but with the cream probably safest...why not make your own?

I would do Sally but I’m not that keen on it that I’d drink much and my husband and son don’t drink it. For some reason people bought me it. The odd tot I’d have in coffee could be safely had carb wise from an ordinary bottle 🙂
Wish I could make my own Courvoisier though!

I’m not actually either. That’s another reason I make just a small bottle to be festive. The big bottles always ended up half drunk.
 
That low carb Baileys sure has lot of erythritol in it. I’d be on the toilet all day if I drank that. Maybe you shouldn’t drink Baileys by the pint, though.:confused:
 
I have to reduce the sweetness of most recipes - 'normal' tastes are so accustomed to a high level of sweetness.
I usually make the recipe without any sweetener then add what I think might be just enough and adjust from there.
