It wouldn't be well received on Masterchef but it tastes nice and I feel as though I've cheated even though I haven't!

Put a dessertspoonful of mixed berries in the bottom of 4 small bowls.
Make up a packet of sugar-free jelly and divide between the bowls.
Leave to set.

Just before serving, roughly chop the jelly. Stir in a dessertspoonful of extra thick cream (I use the Tesco spiced one with brandy) and sprinkle with a few flaked almonds.

Not exactly a sophisticated pudding but it keeps me happy when I want something that feels indulgent 🙂

Sounds delicious! I clicked on it to see your recipe, and the first thing I saw was a picture of a sheep made of cauliflower! NOT what I expected a trifle to look like :D

Hehe! That's been there for months :D It's the same as the Christmas ones appearing in 'Off the Subject' 🙂

Last time we were in Hereford there was a greengrocer's shop with a window full of cauliflower sheep. 🙂
