I'm attempting to make a low carb lime cheesecake tonight. Found a recipe online that uses sugar free lime jelly mixed with cream cheese. The base is made using crushed almonds & butter. It's a non bake type. I'll let you know how I get on.🙂
 
Make sure your cream cheese is at room temperature or it will be a bugger to whip into the jelly!
 
The recipe says not to use spreadable cream cheese as it won't set properly. Surely all cream cheese is spreadable. That's the nature of cream cheese!
 
I do have to confess that I always used 2 sachets of the jelly when I made it and added some thick cream to the cheese before mixing in the jelly.
 
I'm using 2 sachets of jelly. Don't have any thick cream, I might have to go out & get some.
 
It just makes the cream cheese a bit runnier so it is easier to mix with the jelly.
 
Well it's all done now & in the fridge. Just hope it sets.:D Now on to the chicken & tomato casserole in the slow cooker.:D

The lime cheesecake is from the Ditch The Carbs website. As for the casserole, just made it up.🙂
 
Chicken & tomato casserole was gorgeous, even though I forgot the garlic & onion! 🙄
 
Fancy a piece of that cheesecake! We've just had a rare Valentine treat of Chinese food and I never thought I'd find myself saying I wish they'd put a bit of MSG in. Tasteless!

Dread the BG result later though! Can't see your little feast pushing you up too far Mark.
 
Hopefully not. Depends on the size of cheesecake portion.🙂 I was 5.5 before dinner so I have a bit of leeway.:D
 
Well the cheesecake was definitely a hit.🙂 texture is different to a normal cheesecake, more like panacotta. The coconut & almond base was lush! Must attempt a low carb custard tart next.:D

had a go of this today, just finished it, have to say it was great, will defo do it again and maybe experiment with some other flavours, vey nice.

Wow! Great design:D. I made another one at Easter and added some frozen berries. Lovely & still no effect on BG. Might try doing a srawberry one next time.
 
Sounds good, I need to do one less zesty as my youngest daughter cant take the acid it hurts her tongue. (on the bright side more for me) I added up about 24 carbs in the whole thing which I reckon will serve 8 so good stuff. I'm thinking of trying to do a vanilla version as that's my daughters favourite. the top is one square of melted Lindt applied via a syringe (not an insulin one) thanks for the idea tho
