Labels - what to count as carbs

As I am learning to eat low carb I have what is probably a basic question.......

When looking at a label what do I count as carbs?

As an example I am looking at a label now and it reads in part
Carbohydrate 6.1g
of which
sugars 1.4g
starch 4.7

So is the carb count 6.1 or is anything taken off that figure
 
You're right, carb count in your example is 6.1g, which is made up of 1.4g sugar and 4.7g starch. Best to consider mainly the total carbohydrate content, unless looking for hypoglycaemia treatment.
