I doubled the recipe size so there was enough to fill 2 cake tins. That means there was a staggering 18 eggs in the recipe.😱 I tried with less, but the mixture was too dry. Texture isn't really cake like, more like a solid mousse. Very nice, though. Luckily as we have our own hens, we have plenty of eggs.🙂
 
I was tempted to do cupcakes. Think it would work great. I just decided that I wanted to make a big cake. And it was big.:D
 
I'm going into the big city to do the weekly shop today. @Mark Parrott what is all this talk about eggs?! The recipe I found was from Xpert somebody, but it was in this forum, and it calls for 1 egg? Can you post the recipe you used please?
 
I made a courgette chocolate recipe yesterday but it wasn't very successful. Not sweet enough and it had that dryness you get from coconut flour. I am going to rescue them by soaking them in rum.

I don't know about the 1 egg recipe. My cake was based on a recipe I posted for a Yule Log. I just double the cake ingredients but kept the cream & frosting amounts the same.
