Any suggestions what to serve for a Jubilee afternoon tea to encourage the T2s to come along without feeling guilty? I think it was just going to be tea and cakes - oh no!

Oh I know the stresses of this, work are doing something and so far on the menu jam scones with clotted cream, cupcakes and sausage rolls, any suggestions from people here so i can partake in it as well without the feelings of dread on my BS 🙄

Tricky, as pretty much all afternoon tea food is high in carbohydrate. Not really a solution, but small portion sizes help. Perhaps some pots of cut carrot, celery, pepper sticks?

But, perhaps best to take part. After all, it's a once in 60 years event!

I stick to things like cheese and pineapple on cocktail sticks, and Philadelphia cheese wrapped (rolled) up in ham, something else I enjoy is fruit with Franks Diabetic Icecream.

John.

Why not make cucumber sandwiches; no crusts off course and cut into triangles... 🙂

Hasn't it got to be coronation chicken in Burgen bread sandwiches:D

Wow thanks, some interesting recipes!

I have to say, I just tend to have very little REAL cake, but I know it's more difficult from a type2 to adjust to the carbs. What does anyone here do?

I only eat my own made cake so I know whats in it and only have one a day(slice or muffin). Omit spuds with the meal and try and compensate but a slice of cake without icing etc is probably only 30g carbs so not too bad really and well worth the satisfaction. Now my latest batch of blueberry muffins are about 50g (2 slices of bread).
