I am getting a bit fed up with plain chicken so I thought that I would marinade it. Unfortunately most of the recipes have honey or sugar in them. Does anyone here have some ideas of how to jazz up chicken without sweetening or adding lots of carbohydrates? Thank you. 🙂
 
I like lime juice, with chilli, garlic and ginger. You only need a bit of the lime juice (you can mix it with water if it's too sharp) but use the zest as well for extra flavour, mix finely chopped chilli, garlic and ginger (purée is best). Then rub it in and leave for a few hours before griddling, grilling or pan frying. Yum!
 
I do one a bit like Kooky's recipe but add a little fresh lemongrass to the mix then wrap the chicken portions in foil and bake them in the oven. If you want to sweeten it a little add a dash of coconut milk in with the lime juice. You only need about a tablespoon of liquid per portion but make sure the parcel won't leak.

Ooh I might try that, especially the coconut milk sounds yummy 🙂
 
balsamic vinegar is one of my standbys.
The other is chinese cooking wine to which I add garlic paste.
 
I like to stuff them with spinach and feta and make a spicey tomato sauce to go over them....if you flatten the breast then roll them up and slice them when they're cooked it looks pretty too.

I also like to mix some plain yoghurt with curry spices and marinate them overnight and then roast them

At my suggestion, another member tried chicken in a tomato and ground coriander sauce, and said it was delicious. 🙂
