This is my take on the famous Jamaican Jerk Seasoning. It can be used on almost any meat or fish and is wonderful on sweet potato or spuds.
Ingredients:
2 tablespoons dried onion
1 tablespoon garlic powder
4 teaspoons dried thyme
2 teaspoons allspice
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1/2 tsp dried ginger
2 teaspoons black peppercorns
1 teaspoon salt
1 teaspoon cayenne pepper
1 tsp chilli flakes
Place all ingredients in a coffee mill and grind fairly finely. Store in an airtight container (an empty herb/spice pot is ideal) and it will keep for weeks.
To use: either rub into the meat, or place some in a food bag with whatever you want to coat and give it a good shake. Then barbeque, bake in the oven or fry as you choose.
