Is there anyway to workout a daily (healthy) Carb in-take?

I haven't had a chance to get to the doctor's yet but I want to work out what I can healthy eat as the letter Is pretty vague...
 
The best way is to start with your pre-diagnosis diet, then cut that slightly, then cut it again after a week or two, and again if necessary. If you eat a lot of carbs, don’t cut them all down at one. Do it in stages.

If you get a glucose meter, you can test at home to see how certain foods affect you, and this will help you adjust your diet appropriately.
 
Everyone is different and what works for some is not nearly enough for others. As Inka says work out what your normal diet is and reduce.

Personally I would start with your snacks. I started by cutting out the (for me) high quantities of crisps and biscuits - ( i still eat both just much less now ). Starting with snacks and switching snacks for better healthier snacks.

At the same time I started quite quickly to cut the rice potatoes and pasta from my meals and have half the previous amount and have more salad and veg instead.

My first 2 weeks were bad I cut them too much and too quick started to get bad hunger pangs and shakes so added some more back in at each meal but kept the snacks very low.
