Is the rise acceptable

`Today I went out for a cooked breakfast for lunch!! I was a bit hungover and it came with fried bread so I had : 1 sausage, 2 bacon, tomatoes, beans, fried egg and 1/2 slice of fried bread (white).

I was 5.7 before eating and now 2 hours later 8.3 and down to 6.3 forty five minutes later. Is that too much of a rise? I enjoyed the fried bread so much and gave away my hash brown to eat it!!

Well generally speaking, I understand the 'ideal' rise after a meal for a T2, to be no more than 3.0.

So - I'd say that was damn near perfect meself !
 
Id say it was fine too. Fried white bread is one of the things I really miss especially when it's smothered in runny egg .
 
I was concerned it was over 8 though. I'm still quite new to this and usually aim for no more than a 2 rise and usually I'm never over low 7s. So I know fried bread is naughty now and just 1/2 slice along with the beans probably sent me up higher than normal but if the rise is okay it's fine as treat just not too often.
 
I bought Nimble wholemeal bread to day at only 8g per slice. Will be so nice to have a slice of toast smothered in butter!

I don't know what Nimble is like now but back in the 70's when it was marketed for slimmers , it was too airy and for me liking.

Reviews say it's soft and goes off quickly so freeze and defrost as you need a slice. I have no room in freezer and I've had my carbs for today so will have a slice for breakfast tomorrow
 
My other half has been buying the smaller size Burgen lately and that is about 9 grams per slice.

I think your biggest rise may have come from the beans, rather than the fried bread. And you were only just over 8, so when you take in the 10-15% tolerence of meters, it may have been under 8.
 
I'd have been quite happy with that. NICE guidelines say no more than 8.5 two hours after a meal for type 2. Obviously lower is preferable but it looks to me like your body handled it well.

Normally I would keep the beans but not the bread and leave 1/2 the beans if a generous portion. My issue is I like "wet" food so I like the sauce from beans but I normally limit myself to one small spoonful and my BG is usually in low 7s.. Today though a disturbed night of sleep - self inflicted from too much wine, up at 5am as DD 8 hours ahead in HK and text me!! and I was out shopping which was taking longer than I thought and suddenly I was starving!

So I had 2 slices of Nimble as toast for breakfast with lots of lovely butter. It was nice enough for sliced bread, it's nothing like a bit of fresh bread but was good enough. I tested 2 hours after eating it and 7.7 then down to 6.3 four hours after eating. My lunch was better for me as 5.7 after eating (chicken and egg salad).
One thing I did notice is I was starving in just under 2 hours of eating the toast whereas after my normal protein only breakfast I'm okay until lunch time.
 
I don't mind Nimble, but it is like a puff of wind. Not much substance to it. I find one slice of Burgen more substantial than two slices of Nimble.
