Interesting reaction to a few Asian foods

I just came back from a work trip to SE Asia. I knew my food intake would be a bit wonky - between different timing, hotel and conference food etc, so I bought a Libre 2 to keep me honest. Everything was fine, except 3 instances where my glucose went MAD and spiked at 20! Never happened to me before. The offending items were a 1. masala dosa (made from gram flour), 2. a few small spring rolls 3. Four small steamed dim sum (each a week apart, so nothing cumulative). I didn’t add any drippings or sauces. I am aware that a lot of Asian food has some added sugar, but these are relatively lite bites, and I had them for lunch with a pre-lunch glucose around 5. I don’t normally react that strongly even to stuff like pizza. Can anyone shed some light on why such items can cause such a crazy spike?
 
Pizza is notorious for its mix of carbs and fat - which means digestion is slow.

As a guess, I'd say the items above are digested quite rapidly so there's a huge burst that your metabolism struggled to deal with.
