im a veggie and im finding it really hard to eat now that im a diabetic. ive never eaten 4 meals a day and im findin it really hard to do. i love dairy products like cheese and eggs but im now worrying about my cholesteral (or however you spell it) the doctor has told me im over weight ( no s*** sherlock! ive been on a diet since i was 18!) but i love fruit and now i have to cut down on that 2 due to the natural sugars. im afraid of not eating in case i have a hyper or hypo so i would welcome any ideas about food that i could eat thats not gonna do me no harm xxxx cheers xxxx

If you enjoy cheese and eggs, it might be beneficial for you to lower your carb intake as a way to reduce your weight and cholesterol, but you really should discuss this with your Diabetic nurse or specialist.
 
You might also like to get a low carb vegetarian cook book which has lots of useful stuff in it. I got some from Amazon. Although it is a good idea to see what they have in your local library before you buy.

Although fruit has natural sugar in it, don't cut it out completely as you need it for a balanced diet. Some fruits release their sugar more slowly than others.

Talk to your diabetes care team, you may find it helpful to talk to a dietician or nutritionist too.

Rose Elliott has written a veggie cookbook - called Fast, Fresh & Fabulous, and then re-released as a "low GI" version (same book different title). It is full of simple veggie recipes that fit with the low GI approach (can't really comment on low-carb suitability). You can probably get it at a library.

I'd use your library website or go in and ask/browse the cookery/health sections - I found loads of recipe books that way, which helped me work out how to adapt to a diet suitable for veggies and diabetics (me and my husband respectively).

If you get a book about GI foods you can see which fruits are better than others.

We still have a lot of fruit, but have it, for example, on porridge for breakfast rather than a big fruit salad on its own. Sprinkle cinnamon on porridge made with just oats and milk, chuck in fruit and you won't need any added sugar/honey/sweetners.

We've been helped by: Burgen Soy & lindseed bread, multi-grain wraps (great for summer salad sandwiches) and wholewheat pasta (I hate most of it except waitrose own brand). Have you tried low fat cheese? The lower fat mozarella and cheddar don't taste as good to us, but going to the cheese counter and consulting all the labels can help you swap to lower fat nice cheeses.

thanks for the suggestion on porriadge i will definetly try that one .
