For my tea tonight I had a piece of fish with a small jacket potato and some steamed vegetables. I don't like eating plain, boring veg so I happened to have some pasta sauce in the fridge and put a few spoonfuls of this sauce over the veg to liven them up.

What do others do to liven up their boring veg? I am surprised that food companies haven't come up with some kind of sauces to put with or over veg. I have sometimes put some cheese sauce or some tinned tomatoes over them as I just can't eat them plain.
 
The vast majority of the meat dishes I eat are sauce-based, e.g. curry/tagine/stew/bolognese, so I don't have this problem. If ever I do have 'dry' meat, I usually make a small quantity of gravy using granules, or the cauliflower-based cheese sauce that I posted in the recipes thread ages ago (January?).

You can make a VERY nice cheese sauce by overcooking cauli and onion in milk. Blitz until completely smooth and stir in some grated strong cheese. No need for carbs to thicken it. I use low fat cheese and a tablespoon of dried 'parmesan'.
 
We like stir fried veg (broccoli, carrots, courgettes, mange tout) with fresh ginger, spring onions and a splash of soy sauce. This combo goes nicely with grilled/baked salmon, or with various grilled meats/chicken etc. They are good tossed into couscous or tagliatelle if you want to add carbs. If you don't like your veg too crunchy, turn the heat down and put a lid on to steam them towards the end of cooking.

Another thing (haven't had this for a while) is cauliflower with a lemon/olive oil dressing (3:1 lemon juice: oil). Make the dressing and add a finely chopped shallot and a few capers if you like them. Steam the cauli, then toss in the dressing while still warm. Sprinkle with a little chopped fresh parsley.

Stir fry definitely helps - I tend to do one with peppers, onions, broccoli, carrots and then shredded cabbage. The cabbage bulks out out the stir fry rather like noodles so you can also do this as low- to no-carb.

I'm with LeeLee - sauce-based dishes are great for this sort of thing. I'm the kind of person who's only happy with very big and brash flavours, so curries, chillis, tagines etc, are great for getting veg into me.

Mediterranean-style roasted veg is also good - plenty of olive oil, pinch of salt and then once they're cooked you can also drench them in parmesan or mozzarella.
 
my staple veg accompaniment is what i use with a mediterranean tray bake: lemon juice and balsamic vinegar. mmmmmmmmmmmmmmmmmmmmmmm
 
Roasted in the oven with a little olive oil and fresh herbs.
