Ideas for lunch

I am struggling to find ideas for lunch.
Mainly when I have to go in the office, I usually made a salad for the days I go in, however where it's getting cold I really don't want them anymore
I'm not the best cook definitely could make soup to save my life
Just as long as it's not salad I would try anything doesn't have to be hot either
Are there any soups out there I could try.
My blood test in August was 49, next one is due end of November
 
A chunk of nice cheese and half an apple plus a few nuts does me most days or some olives and feta which I appreciate are an acquired taste. Boiled eggs with mayonnaise, chicken drumsticks, a couple of slices of ham and cheese formed into rolls filled with coleslaw....

Sorry I meant to say I can't make soup....
Soup is actually very easy, just put some broccoli in a pan with a stock cube and some water, cook until soft then add some stilton and blitz ( I use a hand blender) season to taste with black pepper.
Similarly with red pepper and butternut squash and add a dollop of Philadelphia.
The Covent Garden Soup for Everyday has lots of good ideas for soups and casseroles.
 
You could add in a tomato. If you have facilities to heat things in a microwave, how about a bowl of chilli (no rice/bread or potato) with a dollop of coleslaw. I made a big pan of chilli on Saturday and just kept having a spoonful of it cold yesterday morning every now and then instead of breakfast.
Soup is incredibly easy to make so don't feel intimidated into not giving it a go.
You could also make a large omelette on Sunday maybe with 6 eggs and whatever fillings you like or need to use up in the fridge including mushrooms, onion, cheese, ham, peppers, tomato chicken etc.. Cut it into wedges like a pizza and keep it in the fridge and take a couple of wedges to work each day with coleslaw if you like it.

I struggle eating eggs so much
Once a week I have boiled eggs after days if mentally preparing myself
I have tried them in different ways but still don't like it
 
I make egg muffins which are a bit like mini fritata and keep better than sliced omelette as they are already "snack sized",

I take whatever I have in the fridge - finely chop some spring onions, tomato, courgette, ... grate some cheddar or crumble some feta. I do not eat meat but you could add some ham or chicken. I even made some for my partner with sliced up hot dog sausages.

Break some eggs into a jug and whisk. Add the chopped fridge contents and stir well.
Add extra flavours such as herbs or chilli sauce (I use piri piri sauce)
Pour into muffin cases and bake in a moderate oven (gas mark 5) for about 20 minutes until firm.

You can eat these hot or cold. I find they heat up fine in the microwave in 20 seconds.

Might try this see if I can manage eggs this way

Satsuma (5 carbs)
Cold cooked chicken pieces leftover from tea yesterday (0 carbs)
Coffee (couple carbs)
Would have had a few strawberries or baby plum tomatoes but forgot to buy those.

That type of thing is an easy lunch, and whilst I don’t low carb at only 28g carbs it would very easily work in a low carb diet plan. I just try to include a fruit, a veg, a protein and a carb.
