Bar Ingredients:
  • 60g Pumpkin Seeds
  • 60g Sunflower Seeds
  • 30g Pine Nuts
  • 50g Chopped Hazel Nuts
  • 50g Dessicated Coconut
  • 2 tsp Vanilla
  • 4 tsp Sweeteners
  • 100g Coconut Cream
  • 6 tsp Coconut Oil (melted)
Chocolate Coating:
  • 50g Cooking Chocolate
  • 1 tsp Cocoa (powder)
  • 2 tbsp Sweeteners
  • 4 tbsp Coconut Oil (melted)
  • 1 tsp Vanilla
Instructions:
Mix all bar ingredients in a bowl then put in the fridge for 15 minutes to set.
Shape the mixture into approximately 6 to 8 bars on a baking sheet and put into the freezer until solid.

Mix all chocolate coating ingredients in a bowl and zap in the microwave until smooth. Spoon chocolate over the frozen nutty bars until covered and put back in freezer until set.

Storage:
Can be stored in a freezer for 1 month or in a fridge for 1 week.
Best served cold.
Just got up and had my first coffee...spotted these and would love some for breakfast...off to collect the girls today...we may make some later.
 
They sound great! I would've made some today but haven't got enough coconut oil.
 
I saw a recipe somewhere for something similar that said you could use part coconut oil, part butter x

I thought of that idea, but still don't have enough coconut oil. I literally have a scraping in the bottom of the jar. Keep forgetting to get any when out shopping.
