How to make a lentil soup?

Hi,

I want to have a go at making a soup with lentils in,, but not really sure what to do.
Anyone have any suggestions?

Also any idea how to make a soup have a creamy type consistency - but in a healthy way?
 
Hi Lucy, I make soup quite often.

I put in
2 Vegetable Stock Cubes (I use OxO but you can use whatever brand you like, beware some are more salty than others)
Sorry dont know how much water I put in - just until the consistency looks right
100g dried red lentils or dried soup mix
1 leek
2 packets of diced carrots % sweed (the come pre mixed in a packet)
or if I am not being lazy about 6 carrots and a medium sized sweed.

I sometimes put in 100 - 200 g potatoes. I also switch the lentils for pasta sometimes (you can buy soup pasta). Wouldnt put pasta and potatoes in the same soup but thats just me...

Hi Lucy, I normally don't bother blitzing it as I like my soup nice and thick but a lot of people do. X

Edit - you have put me in the mood for soup I might have to make some tomorrow :D

main thing with lentils is don't add any salt until the end or they dont go soft ..just a little tip ...
 
I make mine with chicken stock usually and as AM says, no salt until the end. Sometimes I soak them for a while first.
 
Are we supposed to add salt as dx? I have been told to only eat low salt food and NEVER add extra salt?
 
thanks Cazcot for the lentil soup recipe, i made it today and it tastes lovely that will be my lunch for work for the next few days 🙂
