How do I work out what is making my sugars high??

Hi there, I have been T2 diabetic for about 8 years now. I have never had good control, I ate all the wrong things, I was in denial about being diabetic. I am now on insulin and metformin. I have now FINALLY reached the conclusion that I have to do something about it. I have started trying to eat low carb. I am doing ok apart from one thing..bread! Bread is my all time favourite food and I am finding it incredibly difficult to give up. I have switched to Nimble which has 8.1g of carb per slice. The question I have is about my body's response to eating two slices of Nimble with butter. The first time I tested before and 2 hours after eating and the results were quite good, 6.2 before and 6.8 after 2 hours. I was delighted and thought this meant I could treat myself to 2 slices of Nimble for either for breakfast or supper. However the second and third times I ate this and tested, the results were different, going from 7.2 to 15.1 after two hours! Please can someone help and tell me what I am doing wrong? How do I go about finding out which foods send my sugars sky high? Do I isolate each food and test before and after? Does this mean that I cannot eat a meal of different things until I have tested each individual item? Finally, why am I getting different results for the same thing? I am confused :confused: Apologies for the length of this post. I hope someone can help me as I need to get in control of this. Thanks
 
Well - it's mainly the carbohydrate content that sends your BG up.

On those occasions, did you eat the bread totally on its own, or was it just bread and butter or was it as sandwiches - or what? If you ate it with something else, what? - cos some other things could either slow the carbohydrate content down or speed it up - but without knowing what it actually was it's hard to venture a guess why it might have happened as it did and when it did.

The day it seemed good - what sort of a day BG wise had you had the day before, and on that day - had you taken much exercise, or eg done a big shop in a big supermarket after work?

It can be quite complicated or quite easy to spot things sometimes - but without having a lot more detail it's difficult.

It might be that you just can't tolerate bread at certain times of day - and can at other times of day.
 
Hi thanks for your reply Jenny. On the day when it was good, it was toasted Nimble with butter, two slices (16.2g carb). I had this for breakfast. This was overall a good day, I hadn't exercised but had been out shopping with my daughter which is as good as exercise :D On the other occasions when it went high I had them at supper time, same thing! It seems really difficult given all the variables that can cause a spike in sugars :confused: What is the best way to find out which foods affect me? Eat one item at a time and test 1 hour and 2 hours after eating? and also try same foods at different times of the day?
