Hi there, I have been T2 diabetic for about 8 years now. I have never had good control, I ate all the wrong things, I was in denial about being diabetic. I am now on insulin and metformin. I have now FINALLY reached the conclusion that I have to do something about it. I have started trying to eat low carb. I am doing ok apart from one thing..bread! Bread is my all time favourite food and I am finding it incredibly difficult to give up. I have switched to Nimble which has 8.1g of carb per slice. The question I have is about my body's response to eating two slices of Nimble with butter. The first time I tested before and 2 hours after eating and the results were quite good, 6.2 before and 6.8 after 2 hours. I was delighted and thought this meant I could treat myself to 2 slices of Nimble for either for breakfast or supper. However the second and third times I ate this and tested, the results were different, going from 7.2 to 15.1 after two hours! Please can someone help and tell me what I am doing wrong? How do I go about finding out which foods send my sugars sky high? Do I isolate each food and test before and after? Does this mean that I cannot eat a meal of different things until I have tested each individual item? Finally, why am I getting different results for the same thing? I am confused
