Hot (ish) spicy chicken

Type 2
Spicy Chicken

Prepare marinade
Table spoon lemon juice
Table spoon honey
Originally used half a glass white wine ? then cider in desperation once used apple tango!
Mix well in the winter 10 seconds in the microwave

4 chicken thighs with skin on.
1 teaspoon coriander seed
some black pepper
place chicken skin down on a plate sprinkle the coriander seed and black pepper over and place in the marinade

I use a small pun net of button mushrooms

Get the pan hot
A little oil
Place chicken in skin side down, cook until the chicken looks cooked half way through then turn.
after a short time add the marinade and the mushrooms, to taste add a little hot pepper sauce.


Serve with rice ? cous cous.
and veg I tend to stick to peas ? sweet corn ? broad beans

I would have to keep the honey out of it though dont get on with honey it dont seem to like my diabetes

Andrew thanks for this I have written it down on paper and will be seeing if i can create a masterpiece on Saturday
 
I might give it a go too, but will probably use skinless chicken breast.

Will be a change from my usual onion and tomato based meals!

Skinless breast?

I have always assumed that it is the little bit of chicken fat in the skin which cooks the chicken - when I have cooked it early to serve a little later I have found the skin is unpleasent but when it is cispy to start with it is ok.

I have another marinade using orange juice and peach slices goes well with chicken.

I might give it a go too, but will probably use skinless chicken breast.

Will be a change from my usual onion and tomato based meals!

I do a similar marinade Andrew, with orange juice, chopped mango and finely chopped chilli. I like the sound of your recipe and will be trying it soon too.
 
Peachy chicken

I like the idea of the mango and chilli addition I use a blend of orange juice and peaches as a marinade /sauce then add 4 slices of peach cut into each slice of chicken it goes well with salad and new potatoes, however - i must ty had not to down the rest of the sauce
