I made dad some sugar free muffins today plus replaced 50grms of flour with ground almonds and didn't use white flour although I know it would be best not to have any at all. I just feel dad is longing for something a wee bit special. He keeps dreaming about fruit loaf lol

I don't eat them myself so it is hard to know if I really got them right but when dad eats a bit of one (I couldn't allow him a whole one without a lot of worry) do we test before the wee bit of muffin then an hour after only using the muffin/coffee or cup of tea rather than as a sort of dessert at the end of dinner, then decide if I should make them again?

In essence is it best just to test the muffin effect to see how much effect it has without any other bits to eat?

I am trying to work out a biscuit/muffin dad can have occasionally otherwise he his only treat is natural yoghurt.
 
It sounds as though they are pretty low GI pippin 🙂 As they are intended to be eaten separately to a main meal then I think it would be worth testing as you have described to see what effect they have. When eaten with a main meal the GI will be lower still due to mixing in digestion with the other meal ingredients. Some people are able to eat a small snack without a detrimental effect on their levels - hopefully your dad is one of them! 🙂
 
Thank you 🙂 plus it's good to know he might be able to have a tiny bit of one after a meal just to add variety to dinner time, hopefully with less effect as it would be with other food and less of the muffin! Although dad could eat a whole one he would prefer to stay with savoury food if the muffins are detrimental.

Think he would gladly enjoy more potatoes in preference to a muffin lol although I have just heard the tiny bit I served after dinner was enjoyed, think it's the wee change as he had nothing sweet at all over Christmas. He will cross train now so I don't shout 😉

Thank you trophywench I can glean something from them and tweak as often sugar/fat is added that I wouldn't have baked with under normal conditions.

The muffin test seems fine atm last night dad only had a tiny bit after dinner and his 2hr reading was 5.7 which included a full dinner with new potatoes and lots of veg.

This morning he had his breakfast one round of GI toast porridge (modified version) and a small bit of banana. I was worried about taking a test before his morning coffee as he hadn't done much apart from drive and put up with my chatter.....

Tested 4.7 then he had 32grms (I weighed it) of muffin with real coffee topped with steamed skimmed milk (not much) I was going to cut down on his coffee strength but decided to test as if it was a normal morning. Tested after 1hr 5.4

Hopefully this will allow dad the odd treat with the muffin or my modified pancake (will test this too) I think I can alter muffin a bit more but still keep it as a treat. I know it isn't an exact science especially as we can't test, test, test but today at least dad has enjoyed a bit of muffin I can only depend on him to tell me what they taste like!
 
I was pleased as I get the guilty feelings when the numbers aren't good yet still like to see dad enjoying tasty food. I had a headache last night and this morning with worry!

You really shouldn't feel at all guilty, With your help your Dad has got excellent control and is no doubt healthier than many of his peers. The odd slip with the numbers happens to everyone, so it's important to look at the overall picture and not get despondent about the odd few numbers that go astray. I do understand how you feel - I get pangs if I see unexpectedly high numbers, but have to remind myself that it's only because I have always set myself such high standards that they appear bad and that they're really not doing me much harm in the long run. 🙂

How is your Dad's gout at the moment?
 
Like you I set my standards high and feel an utter failure when I get things wrong (vicious cycle as diabetes needs control and control plus me go OTT!)

Well I don't like to say it so I will whisper about gout.......hoping it stays away always have my ears open in the morning waiting for the crutches shuffle but so far even with foods reintroduced we are free of this bit. Dad's knee has improved without doubt with the exercise he is ow doing the muscle strenghtening program and I can't believe that even in the mornings when he used to rely on his crutuches they remain in his room.....trying not to build hopes too high but this is the longest time for dad just to do what he wants and get up after sitting for longer without the pain. He had respite from gout before so I will have to keep my mind prepared. I try to PH balance his food and if one veg likes diabetes but not gout I add one which gout likes lol

Protein foods are good for building him up but we have to watch due to the uric levels - how many scales can I balance!!
I have become very much involved which adds worry but I would move mountains for dad if I could. He shouts at me for being so hyped up and not relaxing!


Gretchen's book has been extremely useful thanks to your advice on buying this plus the little GI book 🙂
