Eating lots of okra, a staple of Southern cooking, may be a useful dietary treatment for Type 2 diabetes and cardiovascular disorders associated with obesity, according to a laboratory study reported in the Journal of Nutritional Biochemistry.

The green seedpods of the okra plant, are used in stews and curries or eaten raw when they are young. Okra is rich in disease-fighting compounds called flavonoids, of which two in particular may help to regulate glucose and fat metabolism through proteins in the liver, the study suggests.

Researchers in China minced okra to produce a concentrated extract. Large doses of the extract were added to the drinking water of obese mice for two weeks. A control group of obese mice received water without okra.
