Hi everyone! A little about me - 65yo, female, not long diagnosed with Type 2, also have a few other health issues. Trying to lose some weight mainly using vegetarian recipes (I can't eat most meats/fish - they don't seem to like me). Trying to have a daily walk although fibro fatigue sometimes doesn't allow it.

Would love any advice. Thank you in anticipation!

How much you will need to do will partly depend on what your HbA1C is and if you have been prescribed any medication to help along with diet to reduce blood glucose as that may also determine what dietary approach will be suitable.
There is certainly no need to eat foods which you don't like or don't like you.

Again walking helps but also there are seated exercises to help get people moving more if they are easier for you. Just Google seated exercise.

Thank you, much appreciated! I should have mentioned I am taking Metformin - 2 x 500g daily.

A low carb approach should be very suitable. It is suggested that low carb is no more than 130g carbs not just sugar per day it is not NO carbs.
