Hi - is kimchi ok for Type 2 diabetics and can you suggest easiest ways to use it, and in what quantities. I am a partner to a man who can be a bit finnicky about food - except when certain things are disguised - i.e. in a stir fry!

I have never had it myself but it has virtually no carbs so no reason for it not to be OK. There are quite a few recipes on the internet using it.

@Leadinglights is quite right that a stir fry is mainly vegetables and has little carbs. To avoid noodles I tried substituting it by thinly slicing cabbage to replace it.
