I’m new (as the post newbies say hello), but I have just been diagnosed with diabetes type 2 & I’m wondering what everyone eats & not get bored of the food, I’m a big pasta fan (well I was but not keep well away. Tia for any comments

But pasta is the most boring bland food I can think of.
I eat any meat, fish, cheese, yoghurt, eggs and a variety of low carb veges, cauliflower, courgette, salad stuff, swede, celeriac, broccoli, onion, mushrooms - and herbs and spices.
There are lots of things to bake - I find the website 'sugarfreelondoner' very useful for things to eat with the coffee and cream
 
Google caldessi low carb and you’ll find brilliant recipes by an Italian chef who had to switch to low carb.
They run a restaurant and a cooking school and have made interesting substitutions for pasta.
You’d think they wouldn’t work but they do.
 
I second the Caledesi books. The recipes are excellent, and very tasty.

One of my regular go to dishes is Salmon baked with fennel, orange and onions. Absolutely delicious and can be prepared in around 15 minutes.
 
I was fond of curries & pasta meals, but obviously had to change when I was diagnosed.
Here are a few things I've done -

Substitute veg for rice & pasta - cauliflower rice is commonly used, find it on t'Net &YouTube. but I don't bother grating it, that's tedious & messy, I just dice it fine, how fine depends on how keen I am at the time
Cook it how it suits you, but preferably not completely mushy
Or mixed cauli & broccoli, fresh or frozen ..... or any other veg, fresh or frozen; Drummer's suggestions are good, and also Search YT, but consider just how suitable they might be for diabetes
I either bung the veg in with the whole meal or do them separately as a sort of stir fry
Recently I've been doing sprouted seeds, usually with other veg like peppers & courgettes

Do you have a branch of Iceland near you?
They cater for all tastes, so yes, they do have pasta, pizza, and other carbs, but have a good root around in the freezers, there are various combinations of veg you might not have thought of
And try their mixed chopped fruit intended for smoothies, with offers that's cheaper & easier than buying fresh, but obviously consider how it might affect your bg
Iceland do a 10% discount for over 60s on Tuesdays, but you need to take a photo ID, I use my bus pass

I used to have a lot of minced beef , but now I don't have anywhere near as much, and I fry off the fat; also use things like fish, turkey/pork/chicken/lentils/beans instead

You soon get used to the different combinations of tastes & textures, and realise just how much stodge you have eaten in the past

Oh, and I've also cut down a lot on the beer & wine; and most fats. I know there are recommendations for various types of oil & fat, but I live on my own and If I bought everything I'd have gallons of the stuff, so I just use a small amount of olive oil for everything, not extra virgin just yer average Napolina or Berio or supermarket own brand, and it works well enough

And Oh again. When I started to eat a lot more veg, for inspiration, self motivation, and to cheer myself up with a bit of retail therapy I treated myself to a shiny new Japanese chef's knife - Search t'Net & YT accordingly
In fact you could Search for Japanese food/meals, but again check with your bg

Edamame or black bean pasta is much lower carb than normal pasta and need far less cooking, 5mins only. It is good with all the usual sauces (home made of course🙂)
You may also find this link useful for tasty low carb meals. No need for bland and boring.
 
Pasta boring? Oh, I could live on pasta with butter and salt. Just live on it! (Nor very healthily, I know, but I could still live on it. 🙂 )
 
Love that salmon recipe!
We have twice a week it's that good.
I love the creamy prawn dish as well, and the sea bass with Taragon.
Bread recipes are good as well, the buns are great. I think I might make some later!

Hope you manage to find a tweaked menu that ticks all the right boxes for enjoyment for you, while also being BG-friendly.

There’s a downloadable e-booklet here which has some general pointers and advice that might help


One option that members here have found very helpful is to ‘eat to your meter’. Get an affordable glucose meter and check immediately before eating and again 2hrs after the first bite to see the ‘meal rise’. That way you can start with what you eat now, and gradually modify the portion sizes and proportions of dishes based on how your body actually reacts as an individual, rather than based on whether a food is supposed to behave.

You may get some pleasant surprises, and be ‘allowed’ things you weren’t expecting, and may also find some supposedly ‘safer’ options just don’t suit your system well at all.

If you need to self fund your BG meter, the most affordable meters members here have found are the SD Gluco Navii or the Spirit Tee2 - which both have test strips at around £10 for 50. Some brands can be 3x that much!
