HI and in need of help

So measured just before tea and after exercise and 10.6 and after a tea of sausages and one medium potato and a spoon of ice cream this was the reading … worried

That reading doesn't surprise me as although your sausages if they were high meat content are not too high carb but even a medium potato is high carb.
It is a good idea to start to weigh the foods you are having and note the carbs from the back of the packets, like how many carbs per sausage.
A 220g baked potato is 45g carb and one the size of an egg 20g carb. You are probably having a lot more carbohydrate in your diet than you think you are. A desert spoon of ice cream is about 8g carb.
 
Totally agree and this was an experiment to see if a smallish potatoe would do this, however total carb grams was 65 today … I am having to guess a lot … as nothing prior to this.

Lying here at the moment and left air feels funny and headache on that side .. again a typical symptoms

Not just the spud; the ice cream was part of the carb count too. Some sausages also have significant carbs in the "filler" added to the meat and fat mix.

Per day carb count is irrelevant. Your blood glucose rises and falls after processing the carbs in each snack or meal; it doesn't store up the glucose for one big daily spike. Test at your spike time after each meal to see whether the carbs in that meal at that time of day need adjustment next time you have a similar menu. Note that your peak time is likely to be closer to one hour than two and the same menu might have different effects for breakfast, lunch and dinner.
