Recently diagnosed with type 1 diabetes, is that true or not if I can get my carbs to insulin ratio right I still can eat what I want as long in future?

Hi and welcome. You may find that some foods make you spike and require more effort in timing insulin but essentially yes matching insulin to carbs means you can eat what you want in ways that feel like you’re not denying yourself foods. Having high carbs with fat and protein helps to reduce spikes. Only eating high sugar foods with a meal not as a snack is also a good idea. And you may find that portion sizes of some foods get much smaller. Many people find low carb eating helps reduce severe highs and lows though so you may find you naturally adjust your diet to be lower carb over time. To begin with it’s generally not recommended to cut carbs drastically though. Have you had good info on carb counting?

Thank you for your comments, I did some Internet searching and bought few book over carb counting and will go to education course soon.

You can. You can also get reasonably close to what people would regard as good control while eating anything you want, though that's harder (hence the courses on how to do it). More practically, you can eat according to what's regarded as a healthy diet for the general public. Certainly (after your course, and after some practice in real life) you can go out and eat whatever everyone else is eating (no need to say you're on a special diet or anything); you might choose different things to make it a bit simpler. And you don't need to eat at fixed times or anything (so skipping lunch when that's appropriate is fine). (Though you do need to make sure you have some emergency food, something with glucose like dextrose tablets or jelly babies.)
