Hi Caly, welcome to the forum. I'm sure you're overwhelmed by it all, but you're in the right place to ask any questions, and the carbs question is a good one to start with. The problem is that carbohydrates convert to glucose in the body very quickly and the resulting rise in blood sugar levels can be scary. In the early days certainly it's a good idea to try and reduce your carb intake by eating fewer things such as bread, potatoes, pasta a rice, perhaps by bulking meals out with more veg. If you haven't been given a blood glucose meter and strips to test your BG levels, then you should ask for one as it's an extremely useful tool that can help you learn how your body copes with food, especially those pesky carbs.
