Help with diet please

Good Evening, I have just been confirmed as type 2 and am struggling with my diet. I am gluten free, cant have much salad and dairy is a pain. I really don't know what to eat, please can some one help, my levels have not changed but only been on medication for 3 weeks, there in the high two's :-(
 
Hi Deirdre, welcome to the forum..... There are a lot of ideas in the recipe section...

For myself, wheat products are pretty much off the menu (by choice) along with rice, & potatoes but I replace them with green leafy vegetables.... Lots of cauliflower, broccoli, cabbage, sprouts etc. Many people find that just protein (like eggs) is pretty much all they tolerate for breakfast as this is the time of day when we tend to be most insulin resistant.

Thank you Martin, I really am struggling. The health centre offered me a course but as I work full time I don't want to ask my bosses for time off as they are being so good about my illnesses (I have fibro, CPS, IBS, sponderlosis, mild sleep apnea and a few more - sounds like I need to be put out to pasture lol) and now diabetes an top, I spoke to my manager today and shes going to see if I can go on the course.
 
The courses are very good & well done for going to work (one of the best ways to keep active). Good luck & welcome 🙂

I have just posted that I am going to try Dr. Michael Mosley's "The 8-week blood sugar diet". It is well worth a read - If the cost is a problem your local library could perhaps purchase a copy? Have a look at my post.
 
Welcome to the group. Do they run any courses at weekends or evenings? I hope you can get time off to go.

My wife is GF, so I know the limitations well, I'm actually now GF by default having been following a Low Carb diet for a couple of months.

For breakfast at the weekend omlettes and bacon and eggs. During the week - home made micro low carb muffins with coconut flour and mixed seeds. I can give you a receipy. I make a batch and slice them thin, then have a couple with peanut butter (whole earth) with a few berries. The fatty nut butter really keeps me going until lunch.

When at work I have a salad, every day! I use caeser dressing as it is low carb and will have some protein with it, chicken, prawns, tuna (wow tuna is a low cal protien power house!). I will have some nuts, or cheese, or pepperami, or kiwi to go with it, and have a graze at afternoon low time.

I have something before i drive home, maybe half a peanut 9bar or the last of my snacks. BTW, crispy bacon slices- oh my lord!

Dinner is normal, curries, fish, meats, just no pasta, rice, potatoes, or bread. Courgettes, cauliflower, and butternut squash are all excellent chunky veg to go with it.

I've eaten like this for 2 months, and been cutting carbs for 3. Added bonus I'm 36lb lighter too.

I had a massive re-feed the other night, loads of curry and veggie side dishes. I feel amazeballs after it. I think you need to mix it up a bit sometimes too, and you do have to enjoy some pleasures. Big fat juicy king prawns dripping in chilli garlic butter - low carb!
