can anyone simplify for me the type of oil and fat that is acceptable to eat? I love cheddar cheese but fear that I'm eating too much
Which oil is better for cooking ? I find all the different types confusing . Thanks in advance

Essentially, the better quality fats the better.... Extra virgin plant based fats are preferable, avoid highly processed polyunsaturated fat. As for cooking, chose a fat with a high smoke point

Hi ~ I use Cold Pressed Rapeseed Oil for all my cooking & frying ~ however as an experiment I recently cooked myself a full English fried in Goose fat. Neither the food nor goose fat gave me cause for concern with my bgls post 2hrs meal. Thats Diabetes for you. I could cook the same meal tomorrow and get an elevated bgl rise.

On Atkins you can have 4oz of hard cheese a day, no problem and "sensible" use of butter according to Dr Atkins. He also advised extra virgin olive oil.
