Hello,
I've just discovered this group after looking for Brownie recipes!
I was diagnosed Type 2 in July last year (has gestational previously) Hba1c 54, kept to a low carb/ intermittent fasting diet after advice from GP and a lifesaving Facebook help group- I'd have given up after 2 days otherwise!- managed to loose 2 stone and get Hba1c down to 40 by November. Lockdown fever and exhaustion (I'm a keyworker) then set in and I'm afraid to say the new way of eating semi went out the window. Not sure what my Hba1c is now but I would probably think it has risen significantly due to how I am feeling again (headache, tiredness, aching legs, peeing etc!). Really trying to get back on track again but its harder this time around. Missing sweet things (hence the search for brownies!!!!) which I didn't the first time round. Also struggling as artificial sweeteners give me migraines so most of the sweet treats are a no go. Have just bought some Lakanto now to try though- so wish me luck. Looking forward to perusing the forums for tips and ideas!! Thanks, becky x
 
Oh, if it is from a fruit does it not affect your blood glucose levels?
 
It is an extract, not the whole fruit.

Well done on your initial success. The great thing is that you clearly have a formula for success which is half the battle. Just need to work on getting back on track which will happen with time.

This last year has been stressful to say the least let alone being on the front line so don't be too hard on yourself.

I must admit that I bought 8 different sweeteners and tried them all for their impact on BS and taste lol. Once I found the right one for me I then adapted accordingly so you'll get there. Let us know if we can help in any way.
 
Hello Becky and welcome. I know you'll find this forum very informative and helpful to keep you on your low carb lifestyle. Well done on losing 2 sts, its not an easy feat and I would keep my mind trained on that accomplishment going forward. I really wish I knew more and be able to advice you but unfortunately I don't. Congratulations on your weight loss - that’s a terrific achievement!

Monkfruit sweetener is fantastic but soooo difficult to find. I tend to default to erythritol which I pound in the pestle and mortar or the deliciously caramel flavoured Brown Suga (which is an erythritol blend with a touch of stevia I think).

Which brownie recipe did you go for?

I’ve made this one a couple of times and it’s reliable as anything even with using different sweeteners. It’s even coped with the addition of raspberries and another time a dash of orange extract.

I tried making a low carb brownie recipe from the recipe section here for my sister in law once, but I confess they were inedible and went in the bin!
 
Next stop Bake Off!

Well... they do sometimes just lob stuff straight in the bin on that show so maybe I would fit right in!
 
You may be kidding but I WISH you would go to Bake Off and cook low carb. I'd then REALLY have someone to root for. Bake Off Bake Off Go For Bake Off! Why not? Do it......we DARE you!
