There are plenty of 'winter veg' which are low in carbs like butternut squash, swede, celeriac which can be used as substitute for potatoes, rice or pasta.I'm type 2 diagnosed on May 2022. I struggle with reducing carbs in Winter and therefore HbA1c has gone up. Hoping to get to grips with it after Christmas.
Hi @jackieb57 I too was diagnosed in May 2022 and found it easier to reduce carbs in the summer months lots of lovely salads. @leading lights has suggested some alternatives to potatoes, rice or pasta. One of my favourite meals at the moment is home made curry and cauliflower rice, I do have potatoes on occasion but find I have to watch the size of the portion. Home made soup is better than bought soups as you can make a huge pot from a few veg and freeze in portions.Hi Thanks for your helpful reply🙂 I do miss my salads but it's a bit cold for them really. My winter staple used to be jacket potatoes . But @leading lights and your reply have given me some ideas.
