Just registered here hoping to come across other type2 vegetarians and a bit surprised there does not seem to be a dedicated vegetarian/vegan section.

Perhaps there is one in here but I did not notice?

Will be trying to follow The Diabetes Code (Fung) but his meal plans all contain meat so trying to work out substitutes.

Working full time and having a lot of other things on my head so very little time - need a very simple meal plan for the non fasting days.

I have seen vegetarian meal plans on this site but they all include multiple snacks and multiple meals per day when I am just looking for super simple 2 meals per day with no snacks in between if this makes sense?

In any case - wanted to just say Hi Everyone
 
Welcome @N4Woman 🙂 There are a number of vegetarians here, or people who aren’t strictly veggie but eat a variety of veggie meals (such as me). You can also search the Recipes section on the website for veggie meals.

What kind of meals do you like to eat?
 
An internet search for low carb or Keto veggie recipes will give you lots of options. It is rather more challenging but if you are used to making meals with potatoes, rice and pasta there are plenty of substitutions you can make which are lower carb.
You may benefit from having a blood glucose monitor so you can test the effect of the meals you normally have and see where you may need to tweak them.

Yes I already have seen the receipes on here and aware of Keto too,thanks.

What I was hoping to find was a ready vegetarian meal plan (not individual receipes) for non fasting days and consitting of 2 meals per day with no snacks in between.

And a dedicated vegetarian/vegan subsection would be great
