I was diagnosed with pre-diabetes just before lockdown but, not really understanding the consequences, I didn’t really act upon it. It wasn’t until a call from my GP last year, giving me the results of a blood test, which shocked me into doing something about it. I was extremely overweight and my cholesterol and blood sugars were sky high and I now had Type 2 diabetes. The doctor told me that I was on the path to a stroke or a heart attack. Since then, I’ve lost over 3 stones and I have lowered my cholesterol and blood sugars drastically. I just struggle with meals. I’m a pescatarian, but I don’t much like pulses, so I find that my meal choices feel limited. I hope I can get some inspiration. Thank you for reading my story!
 
Welcome @DeeDee33 🙂 I’m a pescatarian. I think @helli might be too (apologies if I’ve misremembered, Helli). It’s ok to not like pulses (all pulses?) as you still have plenty you can eat. When I get stuck in a rut, I find the Green Roasting Tin cookery book good. I also plan out my meals as that helps focus my mind, eg in a week I’ll have one fish meal, one raw vegan, two vegan, two veggie and one flexible day. That helps me look for recipes rather than sit and stare at the whole 7 days. I like to base my meal on veg.

Thanks for sharing your story so far, and congratulations on the amazing weight loss, and in the big changes you’ve been making.

You aren’t alone in feeling a bit uninspired with food from time to time, there was another new member mentioning something similar recently - I’ll go and look for the thread…

Here it is… not necessarily veggie/pesca but some thoughts and ideas about getting yourself out of a food slump from various members 🙂

Welcome, there is still plenty you can eat that will still be enjoyable, there is no need to eat foods you don't like just because other people say you should.
There is a vegetarian meal plan in the link as well as plenty of other ideas, many recipes you can substitute fish or tofu or halloumi instead of the meat component. https://lowcarbfreshwell.com
It is a low carb approach and that is suggested as being no more than 130g carbs per day, it is not NO carbs which as long as you are not on medication other than metformin or just trying diet should be suitable.

Hi, I'm pescatarian too! Well done with your weight loss, that's awesome. I've just had cholecystectomy and a tia so I'm also trying to lose weight. Everything that I can eat with 5% fat or less I do but I'm regrettably not disciplined all the time! Also I have found a lot of meat substitutes are high in vegetable oil so try to fill up on lower fat things like wholegrain rice, pasta, vegetables and just have a bit of the lower fat meat substitutes protein. Quinoa, couscous and bulgar wheat are nice mixed with a load of your favourite vegetables, mine are broad beans, green beans, sweetcorn, cauliflower, mushrooms, onions, olives, tomatoes, avocados black pepper and a bit of soya sauce. I also sometimes add meat subs or tuna. I love sandwiches and soup. I like Naked noodle pots as they're tasty, low fat, and under 300 cals for a quick easy meal. I know it's more exercise I need but my mobility is limited. If you need to nibble plain wholegrain rice cakes are nice sometimes with a bit of marmite on. When in season I eat plums, pears, kiwi for snacks. In winter I try and have plain porridge made with skimmed milk and a bit of sweetener and frozen raspberries. Hope this helps, take care x

Thank you so much for this. I have checked out the link and read suggestions made by other people who feel the same way. I used to love food shopping, but now it’s just a case of being surrounded by foods I can’t ‘afford’ because of my diabetes. However, I will check out the Caldesi and Hairy Bikers cook books for inspiration and hopefully ignite my love of cooking again!

I don't think there are any foods which are more expensive because of my dietary choices. In fact I have found it cheaper as meals that would previously have only done 4 portions now do 6. A bottle of flavoured sparkling water is cheaper than a carton of apple juice./
 
The Caldesi books have quite a few fish recipes. Salmon and Fennel is my favourite of theirs, eat it twice a week. And their see bass recipe is delicious as well, but requires oodles of butter and double cream!

Thank you. I meant ‘afford’ as in the foods my diabetes doesn’t allow me to have. I love fish in batter and scampi in breadcrumbs, rice and pasta, but I can only eat them occasionally because of the carbs (even the whole grain ones). There are lots of foods in sauces or pastry, but they are high in fat. I love fruit, so it’s disappointing having to limit the amount I eat and I’m sick of the sight of salads for my lunch at work. I’m on the Weight Watchers food plan, so I’m quite limited in what I can eat apart from vegetables, which I’m so bored of.have to avoid the batter and most things in the supermarket are coated in breadcrumbs (carbs) or have a high fat content. I know we are all in the same boat, but it just feels quite monotonous. Sorry for the moan!

As you eat fish there are lots of options with that, look for lightly dusted fish either in the freezer at most supermarkets, salmon is always good, normal pasta is high carb but that made from black beans or edamame beans is low carb only 15g carb per 100g dry weight, I just bought some edamame bean noodles which are low carb, many find cauliflower rice a good substitute, tofu is good in stirfry.
If you are going low carb then fat is less of an issue as it does not convert to glucose. Making your own sauces from fresh ingredients means you can make them low carb.
