I have been using Huel (in increasing amounts) since around February last year. I currently use the normal powder each morning for my breakfast, occasionally a savoury meal as part of my lunch at work, and I often take a spare powder shake as well in case needed.
I can honestly say that using these products have been incredibly beneficial for my overall T1D management from a nutritional perspective. In combination with the Freestyle Libre 2, these have been somewhat life-changing (or at least very significant especially whilst at work and away from home). I think these products allow for great consistency of meal plans and provides a more reliable/predictable idea of how my glucose levels will react in the following minutes and hours.
Whilst the taste does take a little getting used to as you've mentioned, there are now quite a lot different options to choose from, whether that be the lower carbohydrate powders, the specific protein powder (also very low carb) or savoury meals to incorporate into lunch or evening meals alongside other foods or standalone.
I don't want to put direct links to the Huel site here, but there are a lot of good resources and guidance for use in managing/controlling diabetes (especially for T2D). Huel are very good for providing info on the nutritional breakdown and glycemic indexes (GI) for each product, and I believe there are a couple of threads on their own forum with similar questions to yourself (I believe i've provided replies to some of them as well!).
