Healthy green veg

I'm surprised that carrots are in that low carb list that @Windy posted.
Carrots (along with peas , beans and tomatoes ) are veg that I am wary of, because they seem to raise my BG much more than for some other Type 2's. We don't all respond the same way to the exact same carbs - so learn which foods your body likes, not just those that others say are OK for them!

Lots of nonsense sadly seems to be propagated on some low carb websites that seems to be stated as "fact" later, such as "No root vegetables." etc.
Carrots - less than 10g carbs per 100g, which many here use as a guide to low carb. As you say though, if you react differently to other type 2s, you can choose to avoid them.

I found being selective in what combination of the veg I had worked well, so I wouldn't have peas and broad beans but would have either of those with broccoli or courgettes or cabbage or spinach or swiss chard.

Tonight was brussel sprouts, roasted with beetroot, and a chipotle sauce.
It sounds disgusting, but actually worked well with stuffed mushroom.
 
I hate to make anyone jealous but trying to cope with a glut of green beans, tomatoes, courgettes.
It is a good job our allotment has a collection for donations to a local food bank.
