So after struggling with bg levels for a couple of weeks I decide to sample a tiny piece of the hazelnut praline I made, then a piece of the hazelnut sponge, then the caramel chocolate mousse, then the ginger crème brulee, this is all to make up one dessert for the family tomorrow. Still have the mirror glaze to do. Then I sample the chocolate butter cream for the cake. I am now stilling here wondering why I did all that, I know I can't eat them so why keep putting them in my mouth. Baking is my passion but I need to learn when doing it for other people not to put leftovers in my mouth.

It's a one off! Don't be too harsh on yourself. p.s. if you need any help tasting .......

I like baking too but recently I started using whole meal flours, light cream (though you can't whip it), sugar free dark chocolate, fresh or unsweetened canned fruit (in natural juice), whole meal pastas, bake baseless quiches, stevia (when sugar is called for), and I've added a lot of lentils, chic peas, mixed beans (never broad beans - Google it), wild brown rice rather than white, a lot more fish and chicken and if I want juice, I only have a small glass in the morning, which I make myself with the juice extractor. My Dr told me yesterday that I've lost 8.6 kg in the last approx 7 weeks. I couldn't believe it.
I'd done some research though and discovered that Diabetes is reversable. The thing is, it calls for a lifestyle change, referring to diet, though I'm not calling it a diet and in particular, exercise. It looked like I had a couple of major difficulties though. My first problem was that my husbands response to the suggestion of changes was that he said, he wasn't going to eat ******* weird food and not to try and make him. Ok, so I didn't mention it again, I just did it. The first meal I made was a lentil, chick pea, tomatoe, mixed bean & wild brown rice sort of paella. He stuffed it down saying, wow this mince is fantastic! There was no mince.
For dessert I made a chocolate mousse, with egg whites, sugar free dark chocolate & cream. To whip the cream I had to beat a little whole cream as stiffly as I dared and then slowly added the light cream, together with a little I had added half a teaspoon of cornflour to. He wolfed down that too and would've eaten the lot if I'd let him.
I figure it's all about improvising and substituting.
My other big problem is extreme vertigo - result of a stroke (medical stupidity after 6 mths in hospital), so I can't exercise. The motion required to scrub the stove makes my head spin wildly until I throw up and or fall over, so back & forth, up & down exercise is impossible. It prevents me walking on uneven ground too, so no walks along the road like joggers, or even around the back yard. However, Woolies trollies are too heavy to fall over, so instead I go to the biggest store at very low peak times and I race about, as fast as I reasonably can, up and down every aisle with a trolley, like I'm in a big hurry, until I'm just about pooped. I do make sure I need 3-4 things from extreme ends of the store so I don't look like a complete idiot, which I whip in to the trolley and keep going. I realise it may sound loopy and a bit left field but buggar being beaten by a disease, which is reversable! I figure it's all about the 'decision'. There is no such thing as 'the first step'. What a load of codswallop! It's about saying, Buggar this, I'm over it and I am going to ... It's just about deciding to do it and refusing to be swayed because you've made up your mind. There is only one step, to anything, the 'decision'.
Hmmm I suspect that really was a rant. Sorry but I just had to say. Hope it helps you. Reverse your diabetes. (Insert big grin here and a thumbs up)
