I am beginning to dread what to have for meals. Our normal meals are:
Breakfast. It used to be toast and marmite, cereal or porridge
Now I have yogurt and mixed berries, still have 25g of porridge and mixed berries frozen or fresh depending on day and money. I used up the bran flakes and kept them to 30g which I need to stop or reduce? I will not be buying this time.
So what else can I have as hubby will stick to the above?
If cooked I am happy with a mushroom. tomato and pepper 2 egg omelet but that when he has bacon and eggs. I am not a bacon fan and would need a roll to get it over.
Lunch. I was nearly always a sandwich and fruit, so not that's a salad now. Fish fingers chips n beans I just go to fish fingers and low sugar beans and no chips
Dinner. I hate and cannot decide and this is where the tears start. I think I get less motivated tired and resentful as the day goes I had the salad and the omelet so now what. stews and casseroles no potatoes and the sweet ones are as bad. Limited rice and pasta now too and that really was the basis of my meals. I love nut roasts and things but do not make my own of these and my husband is saying for goodness sake it's so much better why worry when he can eat everything not miss anything. Can you please give me more ideas? Going to try full fat greek this week but he says I'll give myself the diabetic heart attack. He's not buying the Low carbs. He will eat fatty meat and not gain an ounce but is lean and muscular so got a good metabolism and I am just fat fat fat.

You could make your stews as you normally would but just cook the potatoes separately so your hubby can have those and you can have some extra veg.
If you make a shepherds pie split between two dishes and put mashed swede, cauliflower or celeriac on yours and the potatoes on his.
Grilled chicken or chops with veg or salad and coleslaw and your hubby can have some rice with his.
Look at what you were having before and adjust the proportion of carb to protein and veg so a bit of pasta or rice and a bigger portion of the rest.
 
I use turnips in stews and casseroles. 6g of carbs per 100g as opposed to 17g in the same weight of potatoes
 
Nayshiftin, have you tried Cauliflower “rice”. Get a really fresh cauliflower and discard the green parts (they can be cooked separately if you wish) grate it, or pop in a food processor and chop finely. Put a splash of oil in a pan and stir fry the cauli for a few minutes. Ditto cauliflower mash. Just cook the white part until soft, then mash or puree with some butter and black pepper. Celeriac makes great mash too, and you can make chips and roasties out of it.

You can cut courgettes into tagliatelli shape and fry in a little butter as a substitute for pasta. I actually prefer it.

Sounds great yes I will try this out we adore celeriac and yes I could use that as a topping there.
 
That's exactly what my wife and I do. She has mashed potato on hers, I have mashed cauliflower on mine. Haven't tried it with swede or celeriac but might give it a go.

I find celeriac is a much nicer alternative to potato than cauliflower, which I find a bit squishy.

Yes I have gone the zucchini as I love that too. I usually have veg mash but sounds great as I love celeriac . If I do portions and freeze then it will be so easy thanks
 
Great I really am thankful . I’ll be back to new normality soon. He already gets the meat so now I’ll be having a good meal of veg. I like the idea of doing my own cauliflower rice and celeriac mash this week. I’m much more positive. My bloods are down today don’t understand why they went up to 10 the other day but they have bounced down so we are all doing ace. No meds I’m pleased but it has not taken the head to normal yet. So that was not the medication unfortunately. I am not good with meds so happy without,

Hi @Nayshiftin, your bloods may have gone up because you've been so stressed out about your meal choices. I used to cook myself the same as everybody else but not have the taters/rice etc, but now my partner has also cut out the carbs so only my son left to cook taters and rice for! When I do cottage pie I would top my side up with cheese which goes really well with it, likewise chilli. I think most people think I'm barmy having broccoli and green beans with my chillis and curries, but it's actually a great combo.

Can I just say I'm newly diagnosed and I feel the absolute same as you. I'm ok at start of day and by end of the day I'm more and more resentful and tearful.
 
If you are happy to cook then how about this Moussaka recipe at 18g carb? We are having this tonight. I make a portion for 6 and then when it's cold I cut it up and freeze it in portions. It's not nearly as fiddly as it looks!

It does get better I think when your bloods are settling it becomes hormonal too. Sorry you feel that way but it’s a journey . I’ve found things here and the people really do try and help and do heaps. I’m so glad your here and hope you too read and find out ways. I not out of the woods but I can see the trees so to speak . All the best
 
You could also try bare naked noodles or rice but just make sure you rinse them thoroughly as the smell of them when opened is not nice

You can always add extra vegetables and reduce the mince, you should not be concerning yourself with calories just carbohydrates.
 
I am obese so the calories have to be my priority. I have put a lot of weight on even with diabetes and I think this is the case for many. I am very arthritic so movement is not as it should be for a person of my age. It is all very much stacked against going in circles. Being overweight makes you very likely to get Diabetes type 2 and being Type 2 diet and exercise helps but being overweight and having weight on my arthritic bones means the exercise is not good, I get very depressed with the pain and uncontrolled diabetes. So i have a trainer and we attempt to Nordic walk and do exercises and I try at least 3 walks a week with exercise daily plus chores but I am chipping of the iceberg. I have lost over a stone since I started but that still does not pass phase1 and I have given myself 5 phases as goals. At the moment My aims are to lose 10% of my weight and I am like 6lbs away from achieving that not been on scales yet too early. It is 4.26 am so about 9 am I'll see how much I have lost this week but I am guessing it will be June before I get to Phase 2. The other ain is to lower my BG which I have considered. I do not eat much mince 40g if that I hate meat. Hubby will not have Quorn and I have only had it as usually I do veg and potatoes for me but I don't miss it now I do it with celeriac as I love that more than the potatoes but even carrots have carbs. Today we will have Parmesan and Aubergine bake which I absolutely love. I eat salmon so we like the Hairy Bikers salmon on greens with the chilli sesame sauce. I have fish not sure what to do with that as I would usually have had fish n chips or cod n parsley sauce or fish pie with sweetcorn and a nice cheese sauce again that's more carbs so have to rethink that. Vegetable curries have been acceptable as he has Chicken with that and rice and I do the grated cauliflower for me and chilli I always do veg for me. He will have Bacon, egg, mushrooms, beans/ tomatoes and toast this morning no doubt. I will miss the beans or mushroom tomato on toast. I have tried a slice of different loaves of bread but none work for me. In fact, I think Bergen spikes me more, sourdough rye might have been the best but I really like that and wanted more than the slice I was allowed. So have not bought that again. It was the bakers and even going in there sets me off as bread is my downfall. Lots of vegs I did not think had carbs like even adding tinned tomatoes and Id have half a tin, like whole tin between two and that is like 7g of carbohydrate itself. I eat cherry tomatoes like sweets but they are high in carbs too. Beetroot I love Tesco sweet fire beetroot and could eat that by the pack like someone would a bar of chocolate. Now I see the carbs it is not that I stuff myself on sweets, cakes and chocolate but I have been over the top with what I even thought were healthier options sadly. I am learning I am losing weigh and I am trying to change so hopefully things will improove.
 
You have definitely got your head round things to do with carbs.
It is surprising when you start looking at the details of the carbs.
We tot ours up as we prepare meals and the veg do add them in but not at the same rates.
I may have mentioned this before but a useful rule of thumb for veg swaps is
if it grows
  • Under the ground it is high carb (potatoes, parsnips, ...)
  • above the ground it is medium carbs (peas, beans, ...)
  • on the ground it is low carb (celery, lettuce, ...)
Whatever we eat we adjust the portion sizes to stick to a target number of carbs for each meal.

Snack my beetroot shock was 71.2 but usually a pop bar is about 8 or which would Be 18 or satsumas and nuts less about 9 or 10 but my least favourite is nuts .

That’s a very individual thing @Nayshiftin, and you will get lots of different answers - as different people have very different tolerances. Some people do OK with 100-120g of carbs a day... for others 80-100g is about right. And for others even 60g is a bit much.

I think you need to give yourself a huge pat on the back for the way you have coped and how hard you have been working.

Are you checking before-after meals to see what sort of rises you are getting? Just wondering if you might have a bit more liberty than you are allowing yourself?
