I am concerned about the ethical considerations of eating half a cow...... I thing a 48oz tofu steak is a better option....

I respect your recommendation, but...no.:D If I went for a veggie option, it certainly wouldn't be tofu.

I've found some puddings aren't as bad as you might think - meringues in particular are actually quite low in sugar, because they're 90% air - one of those meringue nests is only 12g carb - with cream and fruit it's easy to manage. I've found I'm OK with chocolate mousse too, possibly because of the high fat content, same with ice cream.
 
I once made a meringue using sweetener, but it was so light it disintegrated.:( I will try the shop bought individual ones.
