David I make pancakes for dad with almond or cashew nut paste plus an egg.
The ones from your link look lovely I have a similar recipe but didn't make them as I wasn't sure of the effect of the banana on his levels.

Dad loves the almond or cashew nut ones much better than any other normal pancakes he had before he was diagnosed with diabetes. They may be a good alternative for anyone who can't use the banana recipe. They do look very light & fluffy

No I am never too sure about sharing recipes incase they don't suit everyone 😱
I will add a link to a site who sell the almond and cashew paste and the method although it's expensive to buy if you have a Vitamix or similar the paste is easy to make. I use 50grms of the paste and one egg to make 3 pancakes, keep them in the fridge then toast on the following days.

If it isn't ok to have this link here I will delete it. There are other gluten free recipes on the site although not all suitable for diabetes. The quality of their products is excellent and everything arrives pristine

I may be wrong but isn't almond paste what Americans call marzipan ??

Hi David, I copied this from pippin's link

Almond Paste is our favourite new gluten free ingredient for on demand, quick and easy gluten free baking. Made with the same organic blanched Spanish almonds as our ground almond flour, it is ground longer until a paste is formed. This versatile paste does not have the strong flavour associated with almond butter which is usually made with roasted almonds. We have found it easier and quicker to create simple gluten free treats than using almond flour. The results also have a finer texture than the equivalent almond flour versions.

So you are safe it's def not marzipan 🙂

Thank you Pumper_Sue for finding this I went to bed and only remembered to check my mail now. Posting from my iPhone

The paste is made with blanched almonds nothing else, same with the cashew version. I don't think dad would have known they were made with the paste as they are light and he said no overpowering almond taste.

my laptop wont open the page says its not safe o_O how can i fiddle it please

You don't say which of the two links in this thread give you this problem, but I've tried both and neither give me any such warning. (64-bit Firefox on Windows 10, plus a good anti-virus.)

Maybe if you try another browser. If you're running Chrome, and one or both of the sites has a security certificate issued by Symantec, that probably explains it.
