Relationship to Diabetes
Type 2
Dry Ingredients:

120g rice flour (Doves farm)
70g Cornflour/starch
60g Tapioca flour/starch (Allergycare)
40g of dried milk powder (Supermarket own brand or Marvel)
1 Tbls of sugar
1/2 tsp of Xanthan gum
3/4 tsp salt
1.25 tsp or half sachet of dried yeast

Wet Ingredients:

1 egg
200ml of warm water.
1 Tbls of soft Margarine
1/2 tsp of lemon juice

Method:

Place all the dry ingredients in a medium bowl, sift together to mix, set aside.

Dissolve of Margarine in warm water add lemon juice and mix.

Add the wet ingredients to the dry mixture while beating with a hand held electric mixer add the egg and beat for about 2 mins.

warm the oven then switch off.

Grease and lightly dust a yorkshire pudding type tray.
Fill batter evenly into 6 recesses.

Place tray in oven to prove (rise) for 40mins.

Turn on oven to 350F/GasMark 4 for 35 mins.

10 mins before end brush tops with melted butter or marg and continue baking.
