Cooked a piece of gammon this morning, 45mins in plain water, in the pressure cooker. Whilst that was cooking I chopped up an onion, the tops of some leeks (well washed), a couple of sticks of celery and some left over broccoli. When the gammon came out and set aside to be finished by smothering in mustard and roasting, the veg went into the cooking liquor from the gammon together with a generous amount of ground pepper.... no salt, that came from the gammon. 20 minutes later and I have got a nice, virtually zero carb, vegetable soup, or it will be when I have blended it. Might add some Stilton, to add a bit more interest.

Message is, you don't need recipes from a cookbook, just go for it!

I often said to my daughters that the recipes was out of my head and they used to say URG we don't want to eat brains.

Oh god Docb you had me at pressure cooker , I’m yet to be game enough to cook gammon in it , I usually cook corn silverside in mine with just plain water and onion with a bay leaf and garlic . Tastes good
 
I just love my pressure cooker, would not be without it! I use it every day to cook my main meal, quite often consisting of four or five low carb vegetables and two to three ounces of small new potatoes, all cooked within six to seven minutes. And a nice piece of steak or similar cooked separately in the air fryer.

And soups are very quickly made in it. Ten minutes or less, then blitzed and one has a healthy meal.

In the past I've made bone broth (good for arthritis), and it seriously cuts down on the time the broth takes to cook.
 
My pressure cooker is brilliant for Thursday soup any veg left before the next shop goes in 10 minutes after the pressure builds up I wizz and eat

Kind of going in the other direction in terms of speed, my Mum uses her slow cooker for cooking gammon and swears by it.
I don't eat meat so not missed the slow or fast (pressure) cooker ... apart from the year I made Christmas puds
 
Always use to get ham shanks from butchers to cook as base for soup, it was waste sometimes given to dog owners, now supermarkets charge for them about £3.
 
I used to be terrified of pressure cookers. My mum had a really old one that seemed to threaten to explode at any minute.

I bought a Ninja Foodi this last Christmas and I have found it to be really really good...and safe. We now use it several times a week. There are so many benefits.

Last night it was chicken, mushrooms, sprouts for tea. The Ninja pressure cooker was used for the chicken and the sprouts. Delicious.
