Cooked a piece of gammon this morning, 45mins in plain water, in the pressure cooker. Whilst that was cooking I chopped up an onion, the tops of some leeks (well washed), a couple of sticks of celery and some left over broccoli. When the gammon came out and set aside to be finished by smothering in mustard and roasting, the veg went into the cooking liquor from the gammon together with a generous amount of ground pepper.... no salt, that came from the gammon. 20 minutes later and I have got a nice, virtually zero carb, vegetable soup, or it will be when I have blended it. Might add some Stilton, to add a bit more interest.
