It looks like there’s only 4.5g of carbs in 100g of rhubarb, so using a sweetener rather than sugar would make it a good choice.

I’m not sure if different sweeteners would react differently with it? There might be some that are more suitable than others?

check the packet of the sweetener for carb content. some do still count towards carb intake even though they are not sugar
