Still only in week two of my food re-introduction phase after the initial 12 week T2D pathway to remission diet.
Trying out lots of new or altered recipes to eat, really trying to significantly reduce the amount of carbs I eat.
Tonight I cooked salmon steaks with 4 veg (savoy cabbage, carrots, peas and broccoli).
3/4 of the plate was veg with one salmon steak/fillet each.
For yesterdays main meal, we I had a vegetable kebab, char grilled skewers of mushroom, onion, red and green pepper and lots of salad on the side, no pita.
This morning I had two eggs, one slice bacon (back), mushrooms, one small slice granary toast, one slice black pudding, a small portion of baked beans (low sugar).
Yesterday for breakfast had my first overnight oats, and I have just made one up (for tomorrow), Greek yoghurt, almond milk, rolled oats, chia seeds, frozen raspberries and a dollop of peanut butter.
And I'm experimenting with egg bites/muffins, got loads of recipes to try, so lots of new combos/tastes to try out.
Quite enjoying this new phase actually, as long as I don't put weight back on!
