Hi I go to Florida on 7th jan does anyone have any suggestions on how to eat and adjust insulin

Do you mean adjusting for time zones? There are techniques that people sometimes recommend about gradually shifting basal over several days, but to be honest I have never found those particularly helpful/viable.

The way I view things is that a day of air travel is likely to be a bit ‘out of routine’ and involve a fair bit of guesswork and firefighting, so my approach is usually to set my head/insulin pump time/meal times to the time zone of the location I am travelling to when getting on the plane. Then I monitor more frequently and adjust as I am going until I arrive wherever I am going.

Then I do the same on the way back.

It’s not perfect, but it has been no more chaotic than trying to gradually adjust over days and days of chaos.

do remember to pack at least twice what you think you will need (you *really* don’t want to have to pay for insulin in the US!!).

Several airlines will allow you to take a spare piece of hand luggage (you may have to book this beforehand).

And you can use the ‘sunflower’ lanyard to alert staff to an invisible illness which can smooth passage through security etc.

If it's dealing with best estimates of carbs in restaurants/hotels then I would ask in the place you’re eating if there is carbohydrate information available when you're there or have a look online if you'll be eating at named eateries. Otherwise something like Carbs & Cals to give you an idea of portion size and a carb estimate.
